Fermentation
In steel vats at controlled temperatures (16°), after which the wine rests on a bed of fine lees for a month. The wine then matures in steel vats for 4 months.
Aging
8 months in stainless steel
Winery of Knowledge
Purple-red colour. Intensely fruity nose with distinct plum and redcurrant aromas and hints of toast and blackcurrant. Soft, ripe, velvety tannins and good density. Pleasant and persistent finish.
Ideal with grilled red meats and stews, white meats and well seasoned game. Also excellent with pasta such as rigatoni and mature cheeses.
