Fruit of a skillful blending of Pinot Noir (75%) and Chardonnay (25%) from 15 different Crus
Fermentation

Alcoholic fermentation is followed by malolactic fermentation in temperature-controlled steel vats. Tasting “cru par cru” followed by laboratory analysis. At the end of the blending of the 15 different Crus (from the vineyards of Cumières, Damery, Hautvillers and Verneuil) a small dose (12%) of red Cumières wine is added. This is followed by a second alcoholic fermentation in the bottle, presa di spuma.
