Selection of Chardonnay (5 or 6 different Crus, including those owned in Cumiéres) to which 15% reserve wine is added
Fermentation

Alcoholic fermentation is followed by malolactic fermentation in temperature-controlled steel vats. This is followed by blending of the 5 or 6 different Crus. A second alcoholic fermentation in the bottle, prise de mousse.
