Among these, stands out for its uniqueness the <a href=\"https:\/\/www.banfi.it\/eng\/products\/condimento-balsamico-etrusco\/\">Etruscan Balsamic Dressing<\/a>, a valuable nectar similar to balsamic vinegar that accompanies the most delicious dishes of the Italian tradition.<br \/>In our Balsameria, located inside the Castle of Poggio alle Mura, we dedicate ourselves with skill and passion to the production of the Etruscan Balsamic Condiment, using the exceptionally valuable grapes grown in the area and following the traditional methods of the ancient Etruscans.<\/p><h2>\u00a0<\/h2><h2><strong>How it's born\u00a0<\/strong><\/h2><p>\u00a0<\/p><p>The production technique of Condimento Balsamico Etrusco is long and complex, with an <strong>aging<\/strong> that lasts for about <strong>12 years,<\/strong>The result is a balsamic vinegar with a complex and spicy aroma and an inimitable taste, the result of a perfect balance of sweet and sour.\nThe traditional<br \/>The traditional <strong>white Montalcino grapes<\/strong> (Moscadello and Trebbiano) are <strong>collections<\/strong> <strong>harvested late<\/strong> and then pressed to obtain the must. Once filtered, the <strong>must<\/strong> is then <strong>cooked.<\/strong>This results in a dense, dark monster with a higher percentage of <strong>sugar.<\/strong>Once <strong>cooled<\/strong>, the cooked must is then <strong>placed in wooden barrels<\/strong> for a period varying <strong>from 4 to 8 months.<\/strong>During this time period the <strong>balsamization process takes place<\/strong>.<\/p><h2>\u00a0<\/h2><h2><strong>Production process<\/strong><\/h2><p>\u00a0<\/p><p>The traditional process of producing balsamic vinegar, followed in part also for the production of Banfi Etruscan Balsamic Condiment, involves the preparation of a<strong>\"battery\"<\/strong>, that is to say a series of <strong>small barrels<\/strong> of different woods and <strong>decreasing size<\/strong> (60 to 25 litres).<br \/>The material used for the barrels is varied and is mainly responsible for the varied aromatic bouquet of the Etruscan Balsamic Seasoning: <strong>oak, chestnut, cherry, ash and mulberry<\/strong> release their aromas and contribute to enhance the olfactory complexity of this particular balsamic vinegar seasoning.<br \/>The transfer from larger to smaller barrels only involves <strong>three litres of seasoning<\/strong> and is a <strong>gradual process<\/strong>with different retention times. The entire aging process lasts about <strong>12 years,<\/strong>for a unique balsamic seasoning.<\/p><h2>\u00a0<\/h2><h2><strong>Characteristics\u00a0<\/strong><\/h2><p>\u00a0<\/p><p>The Etruscan Balsamic Seasoning is characterized by a <strong>dark brown color<\/strong>, full and bright and for a <strong>rich viscosity.<\/strong> <strong>viscosity<\/strong>The nose is <strong>spicy<\/strong> and intoxicating, with a <strong>pleasant<\/strong> <strong>and harmonious acidity.<\/strong>Its perfume is unique and <strong>only<\/strong> and <strong>complex<\/strong>, the result, as mentioned above, of the aging in barrels of fine wood of different material but also of the quality of the <strong>late grapes<\/strong> typical of the territory of Montalcino.<br \/>The taste is also unmistakable, with a wise balance of <strong>trends<\/strong> <strong>sweet and sour<\/strong> and a <strong>sweet and sour trends<\/strong> <strong>full<\/strong> and <strong>rich<\/strong>.<\/p><h2>\u00a0<\/h2><h2><strong>What to pair with Etruscan Balsamic Condiment<\/strong><\/h2><p>\u00a0<\/p><p>These its aromatic characteristics make it the ideal condiment for <strong>risottos<\/strong> of all kinds, in particular for the refined <strong>risotto<\/strong> <strong>risotto with strawberries and balsamic vinegar<\/strong> or for the more traditional <strong>risotto alla milanese<\/strong>.<br \/>Other first courses to be enriched with the Etruscan Balsamic Seasoning may be the <strong>fettuccine with sausage and balsamic vinegar<\/strong>, a dish that combines the rustic flavor of pork with the refined seasoning.<br \/>It also goes perfectly with <strong>white and red grilled meats<\/strong> and can be used for the preparation of tasty <strong>scaloppini or marinated fillets.<\/strong>It adds flavor and taste to the <strong>fish<\/strong>, especially if baked or wrapped.
